Delicious vegan pate that can be used as a sandwich spread or on toast, partner with avocado for something extra special.
Mushroom and Walnut Pate
- 15 ml olive oil
- 1 brown onion (coarsely chopped)
- 230 g mushrooms (coarsely chopped)
- 60 ml water
- 230 g walnuts
- 1 pinch salt
- 1 pinch pepper
Heat oil over medium heat and saute onions and mushrooms for 2 minutes.
Add water, cover pan, and cook for 8 minutes over medium heat. There should be a small amount of water left in the pan at this time.
Meanwhile, chop walnuts in food processor.
Add the mushroom mixture to the walnuts in the food processor and process until smooth.
Season to taste with salt and pepper.
Storage: can be stored in the fridge for 2 – 3 days.
