Vegan Gravy

  • 3 tablespoon margarine
  • 2 tablespoon onions finely chopped
  • 2 cloves garlic minced
  • 2 tablespoon plain flour
  • 1 teaspoon garlic powder
  • 2 tablespoon soy sauce
  • 250 ml vegetable stock
  • 1/4 teaspoon mixed herbs
  • 1 pinch salt to taste
  • 1 pinch pepper to taste
  • 1 dollop red wine and tomato sauce if you want to stick to the lyrics


  • Put margarine in a saucepan and saute the onions and garlic over med-high heat until cooked. Reduce heat.
  • Make a roux by gradually adding the flour, while continuously stirring to avoid lumps.
  • Still stirring, add garlic powder, mixed herbs, soy sauce and stock to the mixture.
  • Add a dollop of tomato sauce and red wine to taste; to be an authentic Paul Kelly fan.
  • Add salt and pepper to taste.
  • Simmer until the gravy has reached desired thickness, turn off the stove and you are done!
